Farmer’s Market Recipe: Bison Meatballs & Spaghetti for Two

1lb ground Bison

1 large egg

1/2 onion, finely chopped

1/2 cup plain bread crumbs

3tbsp Italian seasonings –
oregano, thyme, fresh parsley

3tbsp minced fresh garlic

1tsp course salt

1tsp fresh ground black pepper

1tsp Worcestershire sauce

Red Sauce:

spaghetti-and-meatballs4 oz tomato paste

1 large tomato, diced

1/2 onion, finely chopped

3tbsp minced fresh garlic

3tbsp Italian seasonings –
oregano, thyme, basil

2tbsp raw sugar

1tbsp balsamic vinegar

1tsp chili pepper

1tbsp olive oil

1/4 cup of water

Cooking Instructions:

Preheat oven to 350 degrees. In a large mixing bowl, combine all meatball ingredients. Mix well with your hands, then devide into small balls and place in an oiled cookie tray, making sure to leave space between them. Makes about 16 small meatballs. Bake for 15 minutes. If making larger meatballs, bake for 30 minutes.

Red Sauce – In a large saucepan or medium pot, cook the onions & garlic first with the olive oil. Add the herbs and spices, stir, then mix in the rest of the ingredients. Bring to a boil, then lower to medium heat. Add the cooked meatballs and simmer for about 15 minutes. Serve over your favorite spaghetti, top with fresh grated parmesan and parsley!
