This Week at the Covington Farmer’s Market

Greetings, friends! Are ya ready for Wednesday? Of course you are…you’ve probably checked out the menu already which means your taste buds are tingling with thoughts of cream cheesy shrimp rolls from Kandy and a cool glass of her jasmine tea. And what about Frankie’s lunch plate featuring chopped steak smothered in onion gravy over rice. Mmmm! Mmmm. But wait! Chris is fixing a fabulous chicken fricassee with Jasmine rice and candied yams. What a dilemma! Not really…now you have Wednesday lunch and supper, plus Thursday or Friday. And you haven’t even factored in Siria’s delicious pork tamales. I’m really likin’ this.

Ooops! Don’t forget your eggs, some sweet ripe strawberries, and teacakes (to satisfy your 10 am snack attack) and a large iced coffee — just because.

Saturday will stroll in bright and breezy with music from The Dirty Rain Revelers —you probably know them better as Sweet Jones. No matter; their music is great! Have you tried the pork skins from Dennis and Betty? Scrumptious! They also offer “bread crumbs” made from the crushed pork skins and they are giving us a taste of how to use them. The plan is to coat chicken nuggets with the crumbs and fry them for a terrific taste sensation. Can’t wait!!!

You’ll find Mickey and Minnie over at Vincent and Mauricio’s – cookies, that is. While you’re over there, check out Tessier Gourmet’s meal selection. Choose from delightful temptations such as Creamy Cauliflower Soup, Sesame Asian Slaw, and ever popular Eggplant Parmesan!

Lots of gorgeous veggies on the tables just waiting to fit into your recipes. Nick says he has plenty of catfish – grill ‘em, fry ‘em, roast ‘em in the oven. They’re delicious no matter how you fix ‘em. To add to your seafood fix, Mr. Two has mucho jumbo shrimp (and even some not so jumbo ones.) They like the grill just as much as the catfish.

Nancy’s surprised us with early sunflowers! What a way to brighten your table! Add a touch of green with a table plant from Ms. Betty or Trudy or Alton & Sandra. So many from which to choose. And if you are choosing for your garden, don’t forget Double K’s very poopular chicken fertilizer. It will only be available until May.

Jubilee Farms will have lamb for Easter – leg of lamb, lamb chops, ground lamb… There are eggs galore from Jubilee, Ishmael, James, Double K, Nick, Enten Farms…can’t have Easter without eggs! We have more…jams and jellies, fresh strawberries, pickled veggies, quiches, sauces, dressings, oh my! Just follow the music; we’ll be there waiting with fresh coffee and juice and all manner of good things.
