The Creole Man himself, Amedee Frederick, will delight us with his special brand of melodies this Saturday morning as our market gets into full swing. What a wonderful way to enliven your stroll around the market!
A stop at Windfield Farms for one of their tasty egg salad croissants which will definitely put a little life into your morning. Oh what the heck! Grab a muffin or two; there’s always Sunday to think about. Then over to Althee’s to decide which jelly will brighten your week. One of her cobblers wouldn’t hurt either.
You’ll find pralines galore at Rose’s table (duh, that’s what she does best). But you might get lucky and stumble onto one of her praline muffins or praline cake. Yeah….I know…..I’ll give you a minute.
I found the most divine recipe for sweet potatoes. Nick’s table is filled with sweet potatoes (and lots of delicious greens). First peel and slice 2 large sweet potatoes (or several smaller ones) and place the medallions in a Ziplock bag. Combine 2 tsp minced garlic, 1 tbsp olive oil, 2 tbsp melted butter, 4 tbsp grated Parmesan, 1/2 tsp garlic salt, 1/2 tsp Italian seasoning and add to bag. Shake to coat and place sweet potatoes in a spiral around shallow
Don’t forget to stop by Norma Jean’s. She also has frozen “falafel bites” bake as many or as few as you want —a tasty treat on their own or dipped in hummus (Abeer or Vincent). She also has a delicious pita pizza with cilantro pesto, artichoke hearts, olives, red pepper, and feta cheese. Then over to Succotash Ferments for a jar of strawberry kefir, soooo good. Not too far from there, Stacy is set up with a fantastic selection of pickled creations but you’ll also find some creative combinations in her jams and preserves.
Oh the delights of the Covington Farmers’ Market! Lots of delicious each week — lovely artisan breads, raw honey, fresh green juice, sprouts, microgreens, strawberries, orange, and more. The catch is that you have to be here to get the full benefit. See ya!
