Covington Farmers Market Mascot TobascoGood afternoon, friends, and Happy Wednesday! I have high hopes for a great day at the Market today. After all, what could be more alluring than the fragrant smell of authentic Mexican food, the contemplation of fresh spring rolls, the promise of fresh garden vegetables, the anticipation of a crisp garden salad or meaty noodle salad, the smoky sweetness of a pulled pork sandwich or the prospect of tasty Indian cuisine?  Counting the minutes already are you?
Saturday will roll around…at the usual time and just as bright and lovely as ever (I don’t care what the weatherman says). I will be on vacation for the next two weeks so I will miss out on The Lucky Dogs who will be entertaining everyone from the gazebo and Soma Bistro, a new Covington restaurant, who will serve a sensational selection from their menu. I’ve been told that we will also have a parade in the morning, along Columbia Street, so there will be no parking over there. But, don’t let that keep you away because Nuccio’s will have their famous muffalettas for sale (for this weekend only) from their table. Make sure you get here early to get your coffee and enjoy the morning, the music, the many market delights and the parade.

Jordan will have both ground beef and ground pork – the perfect combination for making burgers – just in time for 4th of July grilling. Add a little of Herbs and Spice’s Ranch Dressing Mix for an extraordinary flavor punch to your burgers. Or sprinkle some of her Mexican or Cajun seasonings to thickly sliced veggies before grilling – the choice of veggies has been truly wonderful lately. Check out her entire selection of seasonings because James and John will have chickens and Mr. Two will have his huge, meaty shrimp. What a way to add pizzazz to your meal!

Cleckler’s may have shelled purple hull peas and lima beans in addition to those beautiful peaches and plums this week.  Elizabeth told me they were just about ready for picking last week. Try sautéing her limas with garlic and onions for a tasty side dish. And, if you have leftover corn from the grill, cut it from the cob and make a fantastic succotash with fresh lima beans. WOW!

There will be hummus, cheeses, stuffed artichokes, salsa, pickled delights (merliton, garlic, and beets), cookies (of course) – plenty for you to snack on while you’re grilling. After all, it’s important to keep up your strength. Make sure you drink plenty of water and stay cool. Happy Grillin’!
