Ingredients:
1 patty pan squash, peeled and chopped
1/2 medium onion
1/2 bell pepper, chopped
1 creole tomato, chopped
a few toes of garlic, minced
fresh basil & lemon thyme
sea salt
cayenne pepper
Directions:
This is a simple dish. Chop all the veggies and melt some butter in a sauté pan. Cook the squash for a few minutes by itself, because it will take a little longer than everything else. When it begins to soften, throw in the rest of the veggies and spices. Bring the heat up and simmer until it cooks to the desired tenderness. Cook the noodles according to the directions and serve with the vegetables.
