Slice of Heaven may be in Oregon now, but they are not forgotten! This week, Slice of Heaven Farm sent a simple and delicious recipe for sauteed eggplant. Enjoy!
2 large or 4 medium Asian eggplant, cut into cubes or medallions
2 TBSP olive oil
5 cloves of garlic minced
2 TBSP soy sauce or tamari
1 TBSP rice vinegar
Heat oil in a pan at medium high heat. Add eggplant and stir to coat. Let cool for 4 minutes, stirring only a little to let sides brown. Add minced garlic and soy sauce and vinegar. Stir to coat. Sauté for another 3-5 minutes until tender and browned. Serve hot! sliceofheavenfarm.com
