Radish Cakes

Ingredients:

1/4 lb radishes (cherriette, etc.), grated

1/2 lb daikon radishes, grated

1/2 onion, chopped

2 green onions, chopped

3 garlic cloves, minced

1/4 lb spinach, chopped

equal parts cilantro and parsley, chopped

sea salt, cayenne, paprika (to taste)

1/2 cup bread crumbs

tblsp oil/butter

1 egg

Directions:

Mix all ingredients together until a consistency is reached that will allow you to form small to medium sized patties. Add more bread crumbs or liquid as necessary. Heat a skillet and sauté the patties until browned.

TzatzikiHomemade Tzatziki Sauce

Ingredients:

Fage yogurt (8-12 oz)

1 cucumber, seeded & minced

1 lemon, juiced

1 tsp olive oil

fresh mint leaves, minced

3 cloves garlic, minced

salt, cayenne, paprika (to taste)

Directions:

Mix all ingredients together until well blended. Cover and let sit for a while. It can be served on top of the radish patties, or used as a type of dip. Other serving suggestions include pita bread, rice pilaf, a green salad and a bottle of ouzo.
